How to Make Haluj
Half a kilogram of flour, salt, and enough water are kneaded in a bowl. A dough slightly firmer than an earlobe is obtained. The dough is rolled out with a rolling pin to the thickness of dumpling dough. The rolled-out dough is cut into round shapes about 5-6 cm in diameter. At this stage, a filling is made by mixing Abaza cheese and basil. This filling is placed in the center of each round dough piece, and they are folded and sealed. These prepared pieces are cooked by boiling them in water. They are served hot with ayran (a yogurt drink). Optionally, red chili powder heated in oil or garlic yogurt can be drizzled on top.
