1 kg medium-fat ground beef
2 large onions
1.5 kg wheat flour
2 eggs
1 teaspoon red pepper flakes
1 teaspoon black pepper
1 teaspoon salt

How to Make Georgian Dumplings (Khinkali):
 
First, put the flour in a mixing bowl. Add salt, eggs, and enough boiled and cooled water. Knead the dough until it is slightly firmer than an earlobe and let it rest for about 15 minutes. Meanwhile, put the ground beef in a bowl. Add finely chopped onions, salt, and black pepper. Add one glass of water and soften the meat. Prepare small balls of dough and roll them out to a diameter of fifteen centimeters. Make sure they are not too thin. Place the prepared meat filling in the center. Close by pinching it together like a bundle. Boil the dumplings in plenty of water and place them on a serving plate. Those who wish can sprinkle with black pepper before serving. The characteristic of this dish is that it is eaten by hand. Because if you pierce it with a fork, the juices inside the khinkali can leak out, losing its flavor.
